Honey Rice Cereal Hearts

Ingredients

  • Homemade Marshmallows:
  • 1 cup water
  • 3 T gelatin or 4 packets
  • 1 cup light-colored honey
  • 1 tsp vanilla extract
  • Rice Cereal Treats:
  • 1/2 pan of homemade marshmallows
  • 3 T butter
  • 1 scoop BiPro BOLD Creamy Vanilla
  • 5 cups rice cereal

Directions

Homemade Marshmallows

  1. Line an 8x8 pan with parchment paper
  2. Combine gelatin and 1/2 cup of water in the bowl of a stand mixer fitted with a whisk attachment
  3. Combine honey and 1/2 cup of water in a saucepan
  4. Heat honey and water until it reaches 240°F on a candy thermometer. Stir frequently
  5. Once honey is at 240°F add it to the bowl of the stand mixer and turn on high speed, allow mixture to whip until it has tripled in volume and turned light in color.
  6. Pour marshmallows into lined 8x8 pan and allow to set 6-8 hours.

Rice Cereal Treats

  1. Line an 8x8 pan with parchment paper and measure out rice cereal into a large bowl.
  2. Melt the butter in a saucepan, once fully melted add marshmallows and stir until almost melted.
  3. Remove mixture from heat and add 1 scoop BiPro Bold.
  4. Working quickly pour mixture over rice cereal and combine with a silicone spatula. Lay a piece of parchment over top of the rice cereal treats and press down firmly.
  5. Allow rice cereal treats to cool for 1 hour. Slice into 8 pieces and enjoy! **Remaining marshmallows go great with a mug of BiPro Hot Cocoa!
