Cranberry Orange Scones

Ingredients

  • 1 cup blanched almond flour
  • 1/4 cup coconut flour
  • 1 scoop BiPro BOLD Creamy Vanilla protein powder
  • 3 T sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp fresh orange zest
  • 1/4 cup unsweetened almond milk
  • 2 T unsalted butter, mleted
  • 1/2 cup reduced sugar dried cranberries
  • 2 T fat free cream cheese (glaze)
  • 2 T fresh orange juice (glaze)
  • 1 tsp fresh orange zest (glaze)
  • Sweetener to taste (glaze)

Directions

1.    Preheat oven to 350F, line a baking sheet with parchment.
2.    Combine almond flour, coconut flour, BiPro, sugar, salt, baking powder and zest, set aside.
3.    Whisk together egg, almond milk, and melted butter.
4.    Fold the wet mixture into dry until a dough forms.
5.    Transfer dough to parchment and form a disk shape about 1 inch thick.
6.    Cut into 6 slices and move each piece about 1 in. apart.
7.    Bake for 18-22mins.
8.    Prepare glaze by slightly warming cream cheese and whisking together with orange juice, zest, and a small amount of sweetener if desired.
